Vegan Mole Filling

Ingredients

1 Scoop of About Time Vegan Chocolate Protein
1 oz (2T) Fresh Lime juice
1t Ground Cumin
1t Salt
1 tsp Apple Cider Vinegar
1T Dried Cilantro
1t Garlic powder
1t Paprika
1/4-1/2t Cayenne Pepper or 1 Can Adobo Peppers
1 Serving (2 oz or approx 1C) Lion of Judah – Vegetarian Soya Chunks Plain
1C Bruce’s – Yams – Cut Sweet Potatoes In Syrup
1 Can Tomato Soup or Diced tomatoes or 3 whole tomatoes

Directions

In a large pot add tomato soup, 1 can of water and 2 oz soya chunks. While you bring it to a boil add spices; 1T Dried Cilantro, 1t Garlic powder, 1t Paprika, 1/4-1/2t Cayenne Pepper (or 1 Can Adobo Peppers), 1t Ground Cumin, 1t Salt, 1 tsp Apple Cider Vinegar and 1 oz (2T) Fresh Lime juice. Once soya chunks are re-hydrated, stir in 1 scoop of vegan chocolate protein (be it brand name like About Time or just pea, rice, or hemp protein powder). Then stir in 1C of cut yams/sweet potatoes. Use in a burrito wrap, as a side dish, over rice, with cheese, etc.

Makes: 3 servings

Serving Size: ~1-1 1/2 cups
