Indian Mash

Ingredients

Approx 6C Diced Sweet Potato (peeled)
2C Steamed Cauliflower
1t Sriracha
1T Curry powder
1/2t Dried Basil
1C Chopped Carrots
6 Pieces of roasted red pepper

Directions

Steam 2C cauliflower until really soft. Chop and boil about 1C carrots and about 6C sweet potato on high heat until very soft and most of the water has evaporated (about 45 minutes). Add 1t sriracha, 1T curry powder, 1/2t dried basil and 6 pieces of roasted red pepper. Stir until combined. Served with  poached tilapia and sriracha!

Makes: about 8 cups.

Serving Size: about 2 cups
