Cauliflower Crust Pizza

Ingredients

Crust:
1/2 head of cauliflower
2T coconut flour
2 large eggs
1/2C Shredded Mozzarella Cheese
Spices to taste (garlic, adobo, red pepper, cayenne pepper)
Coconut Oil Spray
Toppings:
1/2C Shredded Mozzarella Cheese
Sliced Sweet Peppers
Sauce:
1 medium tomato
Chopped Sweet Peppers
Spices to taste

Directions

Rice cauliflower in a food processor and microwave for about 5 minutes. Squeeze with paper towel to try to get rid of as much moisture as possible. Wait to cool then mix in coconut flour, eggs, cheese and spices. Spray a cookie sheet with coconut oil and bake until edges start to crisp.
For the sauce just blend the tomato and a few sweet peppers in the vitamix and cook on the stovetop until reduced.
Once the crust is crispy flip it and add the sauce and top with the rest of the cheese and the toppings. Bake until cheese is melted to your desire.

Makes: 1 pizza

Serving Size: 1/2 pizza (without toppings)
