Chickpea Waffles



1/3C Oat Flour
3 whole eggs
1/4C Pear Puree
1/2C Chickpeas
1/8 tsp coriander
1/8 tsp Cumin
Topping (not included in macros):
1 leek
coconut oil spray
3C fresh spinach
2 culantro leaves
salt to taste
garlic powder to taste.
1/4C Greek yogurt
2 oz Smoked Salmon
Optional: Swiss cheese


Waffles: In a VitaMix, blend 1/3C Oat Flour, 3 whole eggs, 1/4C Pear Puree, 1/2C Chickpeas, 1/8 tsp coriander, and 1/8 tsp Cumin.
Topping (not included in macros): Sautée 1 leek with coconut oil, ~3C fresh spinach, and 2 culantro leaves. Season with salt and garlic powder to taste. Divide between the two waffles and top each with some Greek yogurt. I also put a slice of Swiss cheese on my bf’.

Makes: 2 waffles

Serving Size: 1 waffle
