Indian Crepes (Dosa)



1C Lentils, dry
1C Rice, dry (I used white)
2C Water
1T Fenugreek Spice, dred
1t White Pepper, ground
1T Garlic Powder
Other spices to taste
Coconut Oil Spray


Soak 1C dry lentils and 1C dry rice with 2C of water. Add spices and let sit overnight. Add all ingredients (including water, do not drain) to a VitaMix and blend until smooth. The batter should be runny so you can pour it. Spray a hot pan with coconut oil before pouring in batter for each crepe. Cook on one side then flip to cook the other side.

Makes: 10-11 crepes

Serving Size: 1 crepe
