Pineapple-Carrot Cake (w/”Cream Cheese” Frosting)


For the Cake:


2C oat flour
1/3C sweetener of choice
1T cinnamon
1t baking powder
1t baking soda
1/4C walnuts
1C pineapple chunks
2C grated carrots
1/4C Plum Amazing
1/2C (8T) liquid egg whites
3/4C almond milk
3T coconut oil
1t pure vanilla extract


In a VitaMix Grind 2C old fashioned oats into a flour then add 1/3C sweeter of choice, 1T cinnamon, 1t baking powder, 1t baking soda, and pulse to mix. Transfer to a large bowl and add 1/4C walnuts, 1C pineapple chunks, 2C grated carrots, 1/4C Plum Amazings, 1/2C (8T) liquid egg whites, 3/4C almond milk, 3T coconut oil, 1t vanilla extract. Mix thoroughly and pour into two separate cake pans. Make sure the cake pans are sprayed with coconut oil because mine had a hard time coming out.Bake @350f for 40-45 minutes. Allow to cool (I put mine in the fridge) and apply frosting in between as well as on top. I stored mine in the freezer overnight to let the frosting set then took it out in the morning and let it thaw before serving. Store in the refrigerator.

Serving Size: 1 piece


For the Frosting:


2C Cottage Cheese
2T Coconut Butter
1/4C (4T) Agave Syrup (or sweetener of choice)
1/2t Xanthan Gum
1t Pure Vanilla Extract


To make the frosting just combine 2C Cottage Cheese, 2T Coconut Butter, 1/4C (4T) Agave Syrup (or sweetener of choice), 1/2t Xanthan Gum, and 1t Pure Vanilla Extract in a VitaMix and blend until smooth. Store in freezer to set until ready to use. I put a little more than half of the frosting on the cake. I had about 1 1/4C left over. If you don’t want leftovers I would cut the ingredients in half.
