Cinnamon Sweet Potato Waffles

Ingredients

1/4C old fashioned oats
1/2 scoop whey of choice
1/4C (2oz) baked/roasted sweet potato
1/2t cinnamon
1 large egg
1/2C water

Directions

In a VitaMix, grind oats into a flour 1/4C old fashioned oats into a flour. Then att 1/2 scoop whey of choice (I used Vanilla but ON Graham Cracker would be killer, see Kim’s version), 1/4C (2oz) baked/roasted sweet potato (I like to slowww roast them so they are super mushy), 1/2t cinnamon, 1 large egg, 1/2C water and blend. Pour into a waffle maker sprayed with coconut oil.

Makes: 1 waffle

Serving Size: 1 waffle
