Genesis Stuffing

Ingredients

1C Chopped Red Onion
2C Chopped Celery
2T Fresh Sage Leaves, chopped
1 Large Washington Red Delicious Apple
2oz Chopped Baby Bella Mushroom Stems
1/4C (1oz) Finely Chopped Pecans
1/4C 2% Milk Shredded Four Cheese, Mexican Style
1T Garlic Spread/Puree
1/2 Loaf of Food for Life – Sprouted Grain & Seed Genesis 1:29 Bread (10 slices)
2C Vegetable Stock

Directions

Preheat oven to 350F and chop up 1/2 Loaf of Food for Life – Sprouted Grain & Seed Genesis 1:29 Bread (10 slices) into little pieces. Place bread in oven to dry out. In a pot, simmer 1C Chopped Red Onion, 2C Chopped Celery, 2T Fresh Sage Leaves (chopped), and 1T garlic spread/puree. Once caramelized, add 2 C Vegetable Stock and bring to a boil. Add 2oz Chopped Baby Bella Mushroom Stems. Chop up 1 Large Washington Red Delicious Apple and set aside. Remove bread from oven and mix in apple and liquid. Stir in 1/4C 2% Milk Shredded Four Cheese, Mexican Style. Spray a pan with coconut oil and spread out stuffing. Top with 1/4C (1oz) Finely Chopped Pecans and cover with foil. Bake for 30 minutes then remove foil lid and bake for an additional 15 minutes. I realized after I made it that an egg or two would have been nice to mix in the stuffing so add at your leisure.

Makes: 6 cups

Serving Size: 1 cup
