Healthier Cinnamon Chip Cookies

Ingredients

2C whole wheat flour
1/2C oat flour
1t baking soda
1/4t salt
1/2C Hershey’s Cinnamon Chips
1/2C unsweetened applesauce
1T vanilla extract
1/2C sugar (or sweetener of choice)
1/4C coconut oil (not solid/not liquid)
1 large egg (room temperature)

Directions

Cream 1/4C coconut oil with 1/2C sugar or sweetener of choice. Add 1T vanilla extract and continue to beat. Add 1 large egg (room temperature) and continue to beat. In a VitaMix, grind 1/2C rolled oats into a flour. Add 1/4t salt and 1t baking soda and pulse to mix. Add 2 C whole wheat flour and pulse to mix. Slowly add flour mixture to liquid mixture. Stir in 1/2C unsweetened applesauce and mix well. Then stir in 1/2C cinnamon chips. Spray a baking sheet with coconut oils. Roll into balls and flatten, the cookies will puff up so you want to make sure they are flat. Bake at 350F for 12-15 minutes.

Makes: 18 cookies
