Secret Ingredient Chocolate Pudding



1 Can Black Beans
1 Medium Zucchini
1 Medium Red Delicious Apple
1/2C Honey
2 Large Eggs (whole)
1t Instant Espresso Powder
1/4C (4T) Cocoa Powder
1t Ground Cinnamon
1t Vanilla Extract
1t Baking Powder
1/2t Baking Soda
Almond Meringue Topping:
1/2C Almonds
1t Ground Cinnamon
1t Vanilla Extract
1/2C Liquid Egg Whites


In a food processor, grate 1 medium zucchini. In a VitaMix, blend 1 red delicious apple to make applesauce then add 1 can black beans (rinsed and drained) and blend well. Add 2 large eggs (whole), 1/2C honey, , 1t espresso, 1/4C (4T) cocoa powder, 1t vanilla, 1t ground cinnamon, 1t baking powder, and 1/2t baking soda . Blend well and stir into zucchini. Pour ion a baking dish sprayed with coconut oil. Bake for 30 minutes. Meanwhile, grind 1/2C almonds in a food processor until a butter consistency is reached. While the almond butter is forming, beat 1/2C liquid egg whites to form stiff peaks. Add1t ground cinnamon and 1t vanilla extract to the almonds. Slowly beat almond butter into egg whites. After pudding has been baking for 30 minutes, pour almond meringue over and bake for an additional 30 minutes. Serve with FreshFitnHealthy’s Healthy Pumpkin Caramel Sauce
