Pumpkin Spice Pecan Protein Loaf

Ingredients

1/4 cup Krusteaz Pumpkin Spice Quick Bread
1/2 cup 100% Whole Grain Old Fashioned Oats
3 scoops Trutein – Pumpkin Pie (seasonal/limited edition)
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 cup (4T) Phyllium Whole Husks
1 1/2 cup Homemade (unsweetened) Applesauce
1/2 cup (8T) Liquid Egg Whites
1/4 cup Plain Greek Yogurt
1/4 cup Chopped Pecans
Coconut Spray Oil

Directions

In a VitaMix, grind 1/2 cup – 100% Whole Grain Old Fashioned Oats into a flour then add 1/4C Krusteaz Pumpkin Spice Quick Bread, 3 scoops Trutein, 1t Baking Powder, 1/2t Baking Soda, 1/4C (4T) Phyllium Whole Husks and pulse to mix. Transfer to a large bowl. Then blend 1 1/2C unsweetened applesauce (or 1-2 whole apples depending on size), 1/2C (8T) Liquid Egg Whites and1/4C Plain Greek Yogurt. Pour into dry ingredients and stir in 1/4C chopped pecans. Spray a loaf tin with coconut oil and pour in batter. Bake at 350F for 55 minutes.

Makes: 8 slices
