Chunky Pear Protein Loaf

Ingredients

1/2C Old Fashioned Oats
3 scoops Isopure Zero Carb – Pineapple Orange Banana
1/4C Wheat Bran
1T Flax Seeds
1/2T Ground Cinnamon
1/2t Baking Soda
1t Baking Powder
1/4C Cottage Cheese
1/2C (8T) Liquid Egg Whites
1 medium Bosc Pear
1 medium Golden Delicious Apple
1 medium Red Delicious Apple
Coconut Oil Spray

Directions

In a VitaMix, grind 1/2C Old Fashioned Oats and 1T Flax Seeds into a flour then add 3 scoops Isopure Zero Carb – Pineapple Orange Banana, 1/4C Wheat Bran, 1/2T Ground Cinnamon, 1/2t Baking Soda, 1t Baking Powder and pulse to combine. Transfer to a large bowl. Then blend 1/4C Cottage Cheese, 1/2C (8T) Liquid Egg Whites, 1 medium Golden Delicious Apple, and 1 medium Red Delicious Apple until smooth. Mix wet into dry and stir in 1 medium Bosc Pear (chopped). Spray a loaf pan with coconut oil and pour in batter. Bake for 1 hour at 350F.

Makes: 8 slices
