Krusteaz Pumpkin Nut Protein Loaf

Ingredients:

1/2C Old Fashioned Oats
1/4C Krusteaz – Pumpkin Spice Quick Bread Mix
3 scoops Cellucor – Peanut Butter Marshmallow Whey
1/4C Wheat Bran
1t Baking Powder
1/2t Baking Soda
1 1/2C Unsweetened Applesauce
1/2C (8T) Liquid Egg Whites
1/4C Cottage Cheese
Spectrum Coconut Oil Spray
1/4C Chopped Walnuts

Directions

In a VitaMix, grind 1/2C Old Fashioned Oats into a flour then add 1/4C Krusteaz – Pumpkin Spice Quick Bread Mix, 3 scoops Cellucor – Peanut Butter Marshmallow Whey, 1/4C Wheat Bran, 1t Baking Powder, 1/2t Baking Soda and pulse to combine. Transfer to a large bowl. Blend 1 1/2C Unsweetened Applesauce (or about 2 apples), 1/2C (8T) Liquid Egg Whites, 1/4C Cottage Cheese then mix with dry. Stir in 1/4C chopped walnuts last. Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 50 minutes.

Makes: 8 slices
