“Licorice” Protein Loaf

Ingredients

1/2C Old Fashioned Oats
3 scoops Whey of Choice
1/4t Ground Anise
1/2t Baking Soda
1t Baking Powder
2T Truvia
3T Chia Seeds
1/4C Wheat Bran
1/4C Unsweetened Applesauce
3 Bananas
2T Key Lime Juice
1/2C Liquid Egg Whites
Coconut Oil Spray

Directions

In a VitaMix, grind 1/4C oats into a flour. Transfer to a large bowl and stir in 3 scoops whey of choice, 1/4t ground anise, 1/2t baking soda, 1t baking powder, 2T truvia, 1/4C wheat bran and pulse to combine. Transfer to a large bowl. Blend 1/4C unsweetened applesauce, 3 bananas, 2T key lime juice, and 1/2C liquid egg whites. Pour into bowl and stir in 3T chia seeds. Spray a loaf pan with coconut oil and pour in batter. Let sit for a few minutes to allow the chia seeds to expand. Bake at 350F for 55 minutes.
