Pumpkin-Apple Spice Protein Loaf

Ingredients

1/4C Krusteaz Pumpkin Spice Quick Bread Mix
1/2C Old Fashioned Oats
1/4C Wheat Bran
3 scoops Whey of Choice
1t Baking Powder
1/2t Baking Soda
1/2C Liquid Egg Whites
1/3C Plain Greek Yogurt
1 large Golden Delicious Apple
1 medium Red Delicious Apple
Coconut Oil Spray
1/4C Dried Mixed Berries

Directions

In a VitaMix, grind 1/2C old fashioned oats into a flour then add 1/4C Krusteaz Pumpkin Spice Quick Bread Mix, 1/4C wheat bran, 3 scoops whey of choice, 1t baking powder, 1/2t baking soda and pulse to combine. Transfer to a large bowl. Puree 1 large golden delicious and 1 medium red delicious apple into a sauce then add 1/2C (8T) liquid egg whites, and 1/3C plain greek yogurt until smooth. Slowly add the wet to the dry and stir in 1/4C dried mixed berries. Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 55 minutes.

Makes: 8 slices
