Sundae Mugcake

Ingredients

Mugcake:
1/2 banana
3T Liquid Egg Whites
2T Cottage Cheese
1T Coconut Flour
1/2t Baking Powder
2T ON Strawberry Indulgence Casein
1T Chunky Peanut Butter
Chocolate Syrup:
1T Cocoa Powder
1T Granulated Stevia (or sweetener of choice)
Water as needed

Directions

In a hand blender (a bullet), add 1/2 banana, 3T liquid egg whites, 2T cottage cheese and blend until smooth. Stir in 1T coconut flour, 1/2t baking powder, and 2T strawberry casein. Mix well and swirl in 1T crunchy PB last. Microwave for about 2:30. Flip on a plate and top with homemade chocolate syrup.

Makes: 1 mugcake
