Vegan “Lamb” & Zucchini Sautee



8C Sliced Zucchini
1C Chopped Red Onion (about 1/2 large onion)
1 serving of Vegan Stewed Lamb Chunks (about 8 pieces)
2 Yellow Chilis
2T Flora – Bruschetta Eggplant and Pepper Spread


Slice about 8C zucchini and 1C red onion and sauté on the stove with water until soft. Add 2 yellow chilis and 2T bruchetta spread and stir. Chop up about 8 pieces of lamb chunks and add to stir-fry. Meanwhile, steam some brown rice. Once everything is cooked serve together.

Makes: 3 servings

Serving Size: 1 serving (brown rice not included in macros)
