Cocao Espresso Protein Loaf

Ingredients

3 scoops Cellucor Peanut Butter Marshmallow
3/4C Old Fashioned Oats
1/2t Baking Soda
1t Baking Powder
1t Espresso Powder
4t Granulated Stevia
4T Coconut Flour
2T Flax Seeds
2oz (4T) Cocao Nibs
1/2C Liquid Egg Whites
3 Overripe Bananas
1/4C Cottage Cheese
Coconut oil spray

Directions

In a VitaMix, grind 3/4C old fashioned oats and 2T flax seeds into a flour and add 3 scoops of Cellucor PB marshmallow (or whey of choice), 1/2t baking soda, 1t baking powder, 1t espresso powder, 4t granulated stevia, 4T coconut flour and pulse to combine. Transfer to a large bowl. Blend 1/2C liquid egg whites, 3 overripe bananas, and 1/4C cottage cheese until smooth. Slowly mix into bowl with dry ingredients. Stir in 2oz (4T) cocao nibs (or carob chips). Spray a loaf pan with coconut oil and pour in batter. Bake at 350 for 50 minutes.

Makes: 9 slices
