Pumpkin Protein Loaf

Ingredients

3/4C Old Fashioned Oats
4TCoconut Flour
3 scoops Whey of Choice
1/2t Baking Soda
1t Baking Powder
1t Pumpkin Pie Spice
2T Truvia
2C Roasted Pumpkin
1/2C Unsweetened Applesauce
1t Vanilla Extract
1/2C Liquid Egg Whites
1/4C Pepitas
Coconut oil spray

Directions

In a VitaMix, grind 3/4C old fashioned oats into a flour then add 4T coconut flour, 3 scoops whey of choice, 1/2t bakin soda, 1t baking powder, 1t pumpkin pie spice, 2T truvia and pulse to combine. Transfer to a large bowl.
Blend 2C roasted pumpkin (might try less next time), 1/2C unsweetened applesauce, 1t vanilla extract, and 1/2C liquid egg whites. Slowly mix wet into dry. Mix in 1/4C pepitas last. Spray a loaf pan with coconut oil. And pour in batter. Bake at 350 for 50 minutes.

Makes: 8 slices
