Green Coconut Waffles



1/2 bag Fresh Spinach
1/4C Coconut Flour
4 Large Eggs (whole)
1T Xylosweet (or sweetener of choice)
1/4t Baking Soda
1 Large Egg
1 slice Cheese
1 slice Morning Star Farms Bacon
Yellow Mustard


In a VitaMix, blend 1/2 bag fresh spinach and 4 large eggs (whole) until smooth. In a large bowl, mix 1/4C coconut flour, 1T xylosweet (or sweetener of choice), and 1/4t baking soda. Slowly pour and mix wet into dry. Separate the batter in half. Spray a waffle maker with coconut oil and cook. I served mine with a slice of “bacon”, a 1 egg omelet and some yellow mustard. I put some cheese on my moms and she really liked it. The coconut flour is really dense so you will want something creamy, I wish I had some guacamole or something!

Makes: 2 waffles

Serving Size: 1 waffle (fillings not included in macros)
