Mix 1/4C cottage cheese and 1oz (2T) water in a hand blender until smooth. In a large bowl, use 2T of this mix for the mugcake along with 1/2 scoop ON Strawberry Indulgence Casein, 1 large egg, 1/2t butter extract, 1T coconut flour, 1/4t baking soda, 1/2t baking powder and sweetener as desired. Spray a mug with coconut oil and pour in batter. Microwave for 1:30 and flip on a plate. For the frosting, mix the rest of the cottage cheese with 1/2 scoop ON Strawberry Indulgence Casein and sweetener as desired. Spread on the Mugcake and add peanut butter if desired.
