Cran-Almond Protein Loaf



3/4C Old Fashioned Oats
3 scoops Whey of choice (I used Cellucor – Peanut Butter Marshmallow Whey)
4T Coconut Flour
1t Baking Powder
1/2t Baking Soda
3 Bananas
1/2C Liquid Egg Whites
1/2C Cottage Cheese
1/4C Dried Mixed Berries
1/4C Sliced Almonds
Sea Salt
Coconut Oil Spray


In a VitaMix, grind 3/4C oats into a flour, add 3 scoops whey of choice, 4T coconut flour, 1t baking powder, 1/2t baking soda and pulse to combine. Transfer to a large bowl. Blend 3 bananas, 1/2C liquid egg whites, and 1/2C cottage cheese until smooth. Slowly mix wet into dry. Stir in 1/4C dried berries (cranberries, cherries, blueberries, etc.) last. Spray a loaf pan with coconut oil and pour batter in. Top with sliced almonds and sea salt (if desired). Bake for about 50 minutes at 350F.

Makes: 9 slices

Serving Size: 1 slice
