Maple Butter Casein Mugcake

Ingredients

1 Large Egg (whole)
1/2t Maple Extract
1/2t Butter Extract
1/2t Baking Soda
1/2 scoop Casein of choice
1T Coconut Flour
2T Unsweetened Applesauce

Directions

In a large bowl, mix 1 large egg, 1/2t maple extract, 1/2t butter extract, 1/2t baking soda, 1/2 scoop casein of choice, 1T coconut flour, and 2T unsweetened applesauce. You can microwave right in the bowl; takes about 2 minutes. I was low on macros for the night so I just drenched mine in Walden Farms Pancake Syrup. Yum Yum

Makes: 1 mugcake

I also made a variation of this mugcake (that’s even lower in calories & higher in protein) with the following:

Ingredients

3T Liquid Egg Whites
1/2t Maple Extract
1/2t Butter Extract
1/2t Baking Soda
1/2 scoop Casein of choice
1T Coconut Flour
2T Cottage Cheese

Directions

In a large bowl, mix 3T liquid egg whites, 1/2t maple extract, 1/2t butter extract, 1/2t baking soda, 1/2 scoop casein of choice, 1T coconut flour, and 2T cottage cheese. Microwave for 2 minutes and top with whatever you’d like.
