Black Forest Protein Loaf

Ingredients

1/2C My Oatmeal – Signature Black Forest
3 scoops Cellucor – Peanut Butter Marshmallow Whey
1/4C Old Fashioned Oats
3T Hersey’s Special Dark Cocoa Powder
1/4C (4T) Coconut Flour
1/2t Baking Soda
1t Baking Powder
2T Granulated Stevia
1/4C Cottage Cheese
3 Overripe Bananas
1/2C (8T) Liquid Egg Whites
1C pitted cherries
Coconut Spray

Directions

In a VitaMix, grind 1/4C old fashioned oats into a flour. Add 3 scoops Whey, 3T Hersey’s Special Dark Cocoa Powder, 1/4C (4T) coconut flour, 1/2t baking soda, 1t baking powder, 2T Granulated Stevia and pulse until smooth. Transfer to a large bowl and mix in 1/2C black forest oats. Blend 1/2C liquid egg whites, 3 banana and 1/4C cottage cheese until smooth (add 1C pitted cherries at the last pulse), then stir to the dry mix. Spray a loaf pan with coconut oil and bake at 350F for 35-40 minutes.

Makes: 8 slices
