Granny’s Protein Loaf

Ingredients

3/4C Old Fashioned Oats
3 scoops Whey of choice (I used Isopure Pineapple/Orange/Banana)
1/4C (4T) Coconut Flour
1t Ground Ginger (or fresh)
1/2t Baking Soda
1t Baking Powder
2 medium Granny Smith Apples (or 1 1/2C Unsweetened Applesauce)
2 Large Eggs (whole)
1/4C (4T) Jordan’s Skinny Syrup – English Toffee

Directions

In a VitaMix, grind 3/4C old fashioned oats into a flour. Add 3 scoops whey of choice, 1/4C (4T) coconut flour, 1t ground ginger, 1/2t baking soda, 1t baking powder and pulse to combine. Transfer to a large bowl. Then blend 2 Granny Smith apples (or just use 1 1/2C unsweetened applesauce), 2 large eggs (whole), and 1/4C (4T) English Toffee Syrup until smooth. Slowly mix wet into dry. Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 35-40 minutes.

Makes: 9 slices

Serving Size: 1 slice
