Thin Mint Mugcake

Ingredients

1T Casein of Choice (I used chocolate)
1T Coconut Flour
1T Granulated Stevia
1t Hershey’s Special Dark Cocoa Powder
1/8t Peppermint Extract
1 Egg White
1T Unsweetened Applesauce
1/2t Baking Powder
Coconut oil spray

Directions

Mix 1T casein of choice, 1T coconut flour, 1T granulated stevia, 1t special dark cocoa powder, 1/8t peppermint extract, 1 egg white (or 1/4C liquid egg whites), 1T unsweetened applesauce, and 1/2t baking powder. I used this new ramekin I got and sprayed with with coconut oil. Pour in batter and microwave for about 2 mins. I topped mine with 1T FF Cool Whip and some Walden Farms Chocolate Syrup.

Makes: 1 mugcake

Serving Size: 1 mugcake (toppings not included in macros)
