Chocolate Pistachio Protein Bread

Ingredients

3/4C Old fashioned Oats
3 scoops Cellucor Whey Protein- Peanut Butter Marshmallow
3T Hersey’s Special Dark 100% Cocoa Powder
4T Coconut Flour
1/2t Baking Soda
1t Baking Powder
2T Granulated Stevia
1/4C Cottage Cheese
3 Bananas
1/2C (8T) Liquid Egg Whites
Coconut Spray Oil
50 Pistachios

Directions

In a VitaMix, grind 3/4C old fashioned oats into a flour. Add 3 scoops Whey of choice, 3T Hersey’s Special Dark Cocoa Powder, 1/4C (4T) coconut flour, 1/2t baking soda, 1t baking powder, 2T granulated stevia And pulse to combine. Transfer to a large bowl. Blend 1/4C Cottage Cheese, 3 Bananas, and 1/2C (8T) Liquid Egg Whites until smooth. Mix in 50 pistachios and spray a loaf pan with coconut oil. Pour in batter and bake at 350F for 35-40 minutes.

Makes: 9 slices
