Mixed Protein Loaf

Ingredients

2 scoops Grass-Fed Whey Protein of choice
1 scoop Calcium Casein of choice
3/4C Old Fashioned Oats
1T Ground Cinnamon
1/2t Salt
1t Baking Powder
1/2t Baking Soda
1/2C Liquid Egg Whites
2 Medium Red Delicious Apples
1/4C Dried Unsweetened Papaya
Coconut Oil Spray

Directions

In a VitaMix, grind 3/4C old fashioned oats. Add 2 scoops whey protein powder, 1 scoop casein powder, 1T cinnamon, 1/2t salt, and 1/2t baking powder. Pulse to combine and pour into a large bowl. Blend 2 medium apples with 1/2C liquid egg whites. Stir wet into dry and mix in 1/4C dried unsweetened papaya (I dehydrated my own). Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 45 minutes or until a knife inserted into center of loaf comes out clean. Let cool for a few minutes and slice. I served mine with 1/4C Greek yogurt mixed with 1T SF Jam (makes enough topping for two slices) and some sliced strawberries.

Makes: 9 slices
