Tropical Mugcake



1T Whey of choice (I used Isopure)
1/4C Liquid Egg Whites
2T Coconut Flour
1T Greek Yogurt
1T Truvia
1t Baking Powder
1/8t Ground Ginger
1T Whey of choice
3T (1.5oz) Greek Yogurt
1T Unsweetened Shredded Coconut
Fresh Cherries


In a large bowl, mix 1T whey of choice, 1/4C liquid egg whites, 2T coconut flour, 1T Greek yogurt, 1T Truvia, 1t baking powder, and 1/8t ground ginger. Microwave in a mug sprayed with coconut oil for 2 minutes and flip onto a plate. For the topping, just mix 1T whey with 1.5oz Greek yogurt. Top with 1T unsweetened shredded coconut and fresh cherries.

Makes: 1 Mugcake

Serving Size: 1 Mugcake (w/toppings)
