LiveFit Meal 1: Coffee Waffles

Ingredients

1/2C Old Fashioned Oats
5 Large Egg Whites
1C “Riced” Cauliflower
1T Just Brown Sugar
Optional: 1T Flavored Coffee Grinds
Coconut Oil Spray

Directions

In a VitaMix, grind 1/2C old fashioned oats into a flour. Add (optional) 1T fresh ground coffee beans and sweetener of choice. Pulse until mixed and transfer to a large bowl. Blend 5 large egg whites with 1C “riced” cauliflower until the puree is smooth. Stir into the dry ingredients. Spray a waffle maker with coconut oil and pour in batter. Mine made about 2 batches. I served it with a cup of my fresh ground Red Velvet Coffee and 1/2 scoop Cellucor – Red Velvet Whey (+ 2T water). The macros on this are incredible! Who would have thought eating healthy would be this good? All you need to do is get creative in the kitchen!
