LiveFit Meal 1: Rhubarb Waffles



1/2C Old Fashioned Oats
1C Chopped Rhubarb (frozen or fresh)
5 Large Egg Whites
1/4C Jordan’s Skinny Syrup
Coconut Oil Spray


In a VitaMix, grind 1/2C old fashioned oats into a flour. Add 5 large egg whites, 1C rhubarb and 1/4C Jordan’s Skinny Syrup (flavor of choice). Blend until smooth. Spray a waffle maker with coconut oil and pour half the batter in at a time. You may need to leave them in a little bit after the waffle maker dings because they are very moist. So simple and perfectly LiveFit compliant. You could top them with 1C of strawberries (if you can hold off on eating them before the waffles are done 😳)

Makes: 2 waffles

Serving Size: 2 waffles
