Mochi Waffles



1/4C Spelt Flour
1/4C Brown Rice Flour (or Mochiko)
1/8t Salt
1T Erythritol
1t Baking Powder
1/3C Water
1 Large Egg, whole
Coconut Oil Spray


If you have brown rice flour (or Mochiko) already then you can skip this step, but if not, grind 1/4C brown rice in a VitaMix until you reach a flour consistency. Transfer to a large bowl and add 1/4C spelt flour, a dash of salt, 1T erythritol, and 1t baking powder. Mix everything together well. In a separate bowl, beat 1 large egg with 1/3C water. Slowly add the flour mixture and continue to beat until mixed well. Spray your waffle maker with coconut oil and pour half of the batter in (or all the batter if you want a large waffle). I served mine with some Walden Farms Pancake Syrup and some homemade red bean paste (just blend red beans with water, some xanthan gum and plenty of sweetener).
