Chick-un Cutlets

Wow! These are loosely based off of The Seitan Kitchen’s Vegan Seitan Chicken and are pretty phenomenal. That is all.

Chick-un Cutlet coated in Cassava & Air-Fried

Ingredients:

  • 1 1/4 cup (150 g) Vital Wheat Gluten
  • 1/4 cup (30 g) Soy Flour
  • 2 tsp Cornstarch
  • 1 tsp Baking Powder
  • 1 tbsp Kala Namak (Black Salt)
  • 1 tsp Garlic Powder
  • 1 tbsp Ginger, minced
  • 1 tsp Ground Black Pepper
  • 1 cup Water

Directions:

Literally just weigh & mix everything with a spoon just until incorporated. Let rest whilst you clean your mess. I weighed mine into 3 cutlets and wrapped each in foil. I grabbed my instant pot (you could use any steaming method or pressure cooker) and set it to steam for an hour. I did the quick release and let it cool in the fridge. When I was ready to use, I just coated one of them in Cassava (purchased at a Brazilian market) and set the air fryer to 360F for 10 mins. Added some fresh cracked black pepper and some delicious black garlic hot sauce 🤘🏼

Makes: 480 g (3 cutlets)

Serving Size: 160 g
