Vegan Cupcakes 2-ways


Ingredients – Peanut Butter Cupcakes:

  • 1¼ Cups All-Purpose Flour
  • ½ Cup plus ⅓ Cup Cane Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 8 oz. Apple 
  • 90 g Peanut Butter Chips
  • ⅓ Cup Coconut Oil
  • 2 Tablespoons Apple Cider Vinegar

Ingredients – Strawberry Cupcakes:

  • 1¼ Cups All-Purpose Flour
  • ½ Cup plus ⅓ Cup Cane Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 5 oz. Apple 
  • 3 oz. Strawberries
  • ⅓ Cup Coconut Oil
  • 2 Tablespoons Apple Cider Vinegar

Ingredients – Frosting:

  • 1 Cup Vegetable Shortening 
  • 1½ Cups Cane Sugar, powdered
  • ¼ Cup Coconut Water, as needed
  • ½ teaspoon Butter Extract
  • Sprinkles, for decoration

Directions: 

Preheat your oven for 350F. In a big bowl, whisk the dry ingredients together. In another bowl, mix the wet ingredients together. Then pour the wet ingredients into the dry and mix just until the batter just comes together, don’t over mix it or your cupcakes will be sad cakes. Pour into a silicone mold and evenly divide batters. Bake 18-20 minutes until the tops are slightly golden.

To make the frosting, mix all the ingredients together with a hand mixer. Wait until the cupcakes are cooled completely before frosting. Use a piping bag, a butter knife or just a plastic bag with a small hole cut in the corner to frost your cakes. Top with sprinkles for decoration.

Strawberry Waffle Stix

Ingredients
6 Large Strawberries
1/2C Old Fashioned Oats
8T Lucerne – Best of the Egg Original (pasteurized whole egg product)
1/2t Cinnamon
Coconut Oil Spray

Directions
In a VitaMix, grind 1/2 old fashioned oats into a flour. Transfer to a large bowl and mix in 6 large strawberries (puree first), 8T (1/2C) liquid eggs, and 1/2t ground cinnamon. Spray a waffle maker with coconut oil before pouring on batter.  I ate the whole thing for breakfast with some Greek yogurt mixed with Truvia and vanilla extract in my tropical paradise at Lai Nani Resort.

Makes: 12 waffle sticks (2 rounds at 6 each)

Strawberry Mac Nut Protein Cookies

Ingredients
1C Old Fashioned Oats
1 scoop Body Tech – 100% Casein Vanilla
1 scoop Cellucor – Cor-performance Whey – Cor-fetti Cake Batter
1C Strawberries, Sliced
1T Agave Nectar
2T Coconut Oil, Unrefined
5T Raw Macadamia Butter

Directions
In a large bowl, combine 1C old fashioned oats, 1 scoop Vanilla Body Tech Casein, 1 scoop Cellucor COR-fetti Cake Batter Whey, 1C sliced strawberries (puree before mixing), 1T agave nectar, 2T raw coconut oil and 5T raw macadamia nut butter. On a large cookie sheet lined with parchment paper, scoop tablespoon size amounts of batter. Bake at 350F for about 15 minutes.

Makes: 29 cookies

Serving Size: 1 cookie

Fresh Strawberry Casein Waffles

Ingredients

1/4C Old Fashioned Oats
1 scoop Vanilla (or Strawberry) Casein
1 large Egg (whole)
1/4C Fresh Strawberries
1/8-1/4C Water (as desired)
Coconut Oil Spray

Directions

In a VitaMix, grind 1/4C old fashioned oats into a flour. Transfer to a large bowl and add 1 scoop casein of choice. In a bullet, blend 1/4C sliced strawberries, 1 whole egg and about 1/8-1/4C of water. Add to the oats and casein and stir. The batter will be pretty thick so add water to desired consistency. Spray a waffle maker with coconut oil and pour in batter. I served mine with some more fresh strawberries.

Makes: 1 waffle

Strawberry Lime Mugcake

Ingredients

2T ON Strawberry Indulgence Casein
1T Coconut Flour
1/2t Baking Powder
1/4C Liquid Egg Whites
1T Lime Juice
2T Applesauce (+ 1T for topping)

Directions

In a large bowl, mix 2T ON Strawberry Indulgence Casein, 1T Coconut Flour, 1/2t Baking Powder, 1/4C Liquid Egg Whites, 1T Lime Juice, 2T Applesauce and microwave for 1:30. Flip onto a plate and add whatever toppings you’d like. I just ate mine with some more applesauce.

Makes: 1 mugcake

Ingredients

1/2 scoop ON Strawberry Indulgence Casein
1T Coconut Flour
1T Almond Flour
2T Fresh Lime Juice
1T Water
1/2t Baking Powder
1 Large Egg (whole)

Directions:

In a bowl, mix 1/2 scoop strawberry indulgence casein, 1T coconut flour, 1T almond flour, 2T lime juice, 1T water, 1/2t baking powder, 1 large egg and microwave for 2 minutes. I honestly didn’t even transfer it to a mug and it didn’t stick or anything, I think they just puff up more in the mug. This would be good with some melted strawberries on top.

Makes: 1 mugcake

Strawberry Coconut Casein Mugcake

Ingredients

Mugcake:
1/2 ON Strawberry Indulgence Casein
1/4c (4T) Liquid Egg Whites
1T Coconut Flour
1oz (2T) Unsweetened Applesauce
1/2t Coconut Extract
1/2t Baking Powder
Optional: homemade protein ball
Frosting:
2T Greek Yogurt
1t Cocoa Powder
1T Granulated Stevia

Directions

Mix 1/2 strawberry indulgence casein, 1/4c (4T) liquid egg whites, 1T coconut flour, 1oz (2T) unsweetened applesauce, 1/2t coconut extract, 1/2t baking powder in a large bowl. Spray a mug with coconut oil, pour batter in and microwave for 1:30, flip on a plate and microwave for an additional 30 seconds. Optional: I stuffed mine with one of my homemade protein balls then topped it with frosting made of 2T Greek yogurt, 1t cocoa powder and 1T granulated stevia.

Makes: 1 Mugcake
