Fresh Fish Loaf

Ingredients

1C 100% Whole Grain Old Fashioned Oats
1T Crushed Red Pepper Flakes
1T Italian Seasoning
1T Garlic Powder
25 oz Raw Zucchini, shredded
48 oz Tilapia (fresh or frozen)
1 can Mackerel In Hot Tomato Sauce
2T Organic, Unpasteurized Apple Cider Vinegar
4 Large Egg Whites

Directions

In a VitaMix, grind 1C 100% Whole Grain Old Fashioned Oats, 1T Crushed Red Pepper Flakes, 1T Italian Seasoning, and 1T Garlic Powder into a flour. Transfer to a large (emphasis on large) bowl. Add 25 oz Raw Zucchini (shredded), 48 oz Tilapia (finely chopped), 1 can Mackerel In Hot Tomato Sauce, 2T Organic, Unpasteurized Apple Cider Vinegar and 4 Large Egg Whites. Mix very well. Line two loaf pans with parchment paper and pour in batter. Bake at 350F for at least an hour. I sliced each loaf into 10 pieces. Since this makes such a big batch I just cut it all up and stored it in the freezer. I take what I want with me to work for lunch and it pretty much thaws out by the time I’m ready to eat it.

Easter Bread

Ingredients

1C Whole Wheat Flour
1/4C Spelt Flour
1t Baking Powder
1t Baking Soda
1t Ground Cinnamon
1/4C (4T) Shredded Sweetened Coconut
3 Medium Eggs
1C Skim Milk
1t Fresh Grated Ginger
1/4C Homemade Apple/Pear Sauce
1T Apple Cider Vinegar
1C Shredded Carrots
Coconut oil

Directions

In a large bowl, beat 3 medium eggs then slowly pour in 1C skim milk. Grate in about 1t fresh ginger and add 1/4C apple/pear sauce. In a separate bowl sift together 1C whole wheat flour, 1/4C spelt flour, 1t baking soda, 1t baking powder, 1t cinnamon and 1/4C (4T) shredded sweetened coconut. Continue beating the egg mixture and slowly pour in the dry mixture. Stir in 1C shredded carrots and 1T apple cider vinegar last. Coat a loaf pan with coconut oil and pour batter in. Bake at 350F for 50 minutes. I sliced mine really thin because I was going to a dinner so the macros are for an odd number. The bread was so moist and some of the normal people really liked it. πŸ˜‰

Makes: 17 slices

Mixed Protein Loaf

Ingredients

2 scoops Grass-Fed Whey Protein of choice
1 scoop Calcium Casein of choice
3/4C Old Fashioned Oats
1T Ground Cinnamon
1/2t Salt
1t Baking Powder
1/2t Baking Soda
1/2C Liquid Egg Whites
2 Medium Red Delicious Apples
1/4C Dried Unsweetened Papaya
Coconut Oil Spray

Directions

In a VitaMix, grind 3/4C old fashioned oats. Add 2 scoops whey protein powder, 1 scoop casein powder, 1T cinnamon, 1/2t salt, and 1/2t baking powder. Pulse to combine and pour into a large bowl. Blend 2 medium apples with 1/2C liquid egg whites. Stir wet into dry and mix in 1/4C dried unsweetened papaya (I dehydrated my own). Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 45 minutes or until a knife inserted into center of loaf comes out clean. Let cool for a few minutes and slice. I served mine with 1/4C Greek yogurt mixed with 1T SF Jam (makes enough topping for two slices) and some sliced strawberries.

FitMiss Vanilla Chai Protein Loaf

Ingredients

3/4C Old Fashioned Oats
5 scoops FitMiss Delight – Vanilla Chai
1/4C Peanut Flour
1T Granulated Stevia
1t Baking Powder
1/2t Baking Soda
3 Bananas
1/2C Liquid Egg Whites
1/4C Cottage Cheese
1/2C Golden Raisins
Coconut Oil Spray

Directions

In a VitaMix, grind 3/4C oald fashioned oats into a flour. Add 5 scoops FitMiss – Vanilla Chai Protein Powder, 1/4C peanut flour, 1T granulated stevia, 1t baking powder, 1/2t baking soda and pulse to mix. Transfer to a large bowl. Blend 3 overripe bananas, 1/2C liquid egg whites, and 1/4C cottage cheese until smooth. Mix wet into dry. Stir in 1/2C golden raisins. Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 40 minutes.

Chocolate Pistachio Protein Bread

Ingredients

3/4C Old fashioned Oats
3 scoops Cellucor Whey Protein- Peanut Butter Marshmallow
3T Hersey’s Special Dark 100% Cocoa Powder
4T Coconut Flour
1/2t Baking Soda
1t Baking Powder
2T Granulated Stevia
1/4C Cottage Cheese
3 Bananas
1/2C (8T) Liquid Egg Whites
Coconut Spray Oil
50 Pistachios

Directions

In a VitaMix, grind 3/4C old fashioned oats into a flour. Add 3 scoops Whey of choice, 3T Hersey’s Special Dark Cocoa Powder, 1/4C (4T) coconut flour, 1/2t baking soda, 1t baking powder, 2T granulated stevia And pulse to combine. Transfer to a large bowl. Blend 1/4C Cottage Cheese, 3 Bananas, and 1/2C (8T) Liquid Egg Whites until smooth. Mix in 50 pistachios and spray a loaf pan with coconut oil. Pour in batter and bake at 350F for 35-40 minutes.

Granny’s Protein Loaf

Ingredients

3/4C Old Fashioned Oats
3 scoops Whey of choice (I used Isopure Pineapple/Orange/Banana)
1/4C (4T) Coconut Flour
1t Ground Ginger (or fresh)
1/2t Baking Soda
1t Baking Powder
2 medium Granny Smith Apples (or 1 1/2C Unsweetened Applesauce)
2 Large Eggs (whole)
1/4C (4T) Jordan’s Skinny Syrup – English Toffee

Directions

In a VitaMix, grind 3/4C old fashioned oats into a flour. Add 3 scoops whey of choice, 1/4C (4T) coconut flour, 1t ground ginger, 1/2t baking soda, 1t baking powder and pulse to combine. Transfer to a large bowl. Then blend 2 Granny Smith apples (or just use 1 1/2C unsweetened applesauce), 2 large eggs (whole), and 1/4C (4T) English Toffee Syrup until smooth. Slowly mix wet into dry. Spray a loaf pan with coconut oil and pour in batter. Bake at 350F for 35-40 minutes.

Black Forest Protein Loaf

Ingredients

1/2C My Oatmeal – Signature Black Forest
3 scoops Cellucor – Peanut Butter Marshmallow Whey
1/4C Old Fashioned Oats
3T Hersey’s Special Dark Cocoa Powder
1/4C (4T) Coconut Flour
1/2t Baking Soda
1t Baking Powder
2T Granulated Stevia
1/4C Cottage Cheese
3 Overripe Bananas
1/2C (8T) Liquid Egg Whites
1C pitted cherries
Coconut Spray

Directions

In a VitaMix,Β grind 1/4C old fashioned oats into a flour. Add 3 scoops Whey, 3T Hersey’s Special Dark Cocoa Powder, 1/4C (4T) coconut flour, 1/2t baking soda, 1t baking powder, 2T Granulated Stevia and pulse until smooth. Transfer to a large bowl and mix in 1/2C black forest oats. Blend 1/2C liquid egg whites, 3 banana and 1/4C cottage cheese until smooth (add 1C pitted cherries at the last pulse), then stir to the dry mix. Spray a loaf pan with coconut oil and bake at 350F for 35-40 minutes.
